Richard Legault is one of the rare Brussels sprout producer in
Quebec. The profession of Brussels sprout producer goes well with
the profession of apple grower.
At first, it looks like there are more leaves than sprout. It
is only when you look closer that you can see all these little
sprout attached to the stem.
It is only after you have removed all the leaves that the harvest
is completed. The Brussels sprouts are then piled up on a wagon
to be process at the warehouse.
An easy to use specialized machine cuts the sprouts from the stems.
The sprouts are separated, inspected, sorted and packaged.
Most Brussels sprouts found at your super market
comes from Richard Legault’s farm, profession that was transmitted
from father to son.
